Italian Tuna Salad

Ingredients
* 1 c halved cherry tomatoes * 1/4 red onion, sliced thin * 1 (12-ounce) can solid white albacore tuna in water, drained well * 1 cup cooked white beans such as canellini, great northern or garbanzo * 2 T sliced green olives * 1 tablespoon capers, rinsed * 2 tablespoons extra-virgin olive oil, plus extra for drizzling * 1 teaspoon finely grated lemon zest * Juice of 1/2 a lemon * 2 tablespoons basil leaves, cut chiffonade * 2 tablespoons toasted pine nuts (optional) * Kosher salt and freshly ground black pepper * Fresh greens: spinach, romaine, leaf lettuce, etc

Directions

Place the tuna in a large salad bowl, breaking it into large chunks. Add the beans, onions, olives, and capers and toss to combine. Add the olive oil and lemon zest and juice and toss again. Season to taste with salt and pepper.

Serve cold, on bed of fresh greens.

Top with basil and pine nuts.

Yield: 2 large salads
