Parmesan Crusted Baked “Fried” Zucchini

Ingredients
1 Large zucchini2 Tbsp wheat flour3 Tbsp grated parmesan cheese1/4 cup of egg beaters
Directions
Parmesan Crusted Baked “Fried” Zucchini

1. Slice zucchini into 1/4” thick rounds.

2. Coat in flour. (I shook it up in a zip lock baggie)

3. Dip in eggs beaters

4. Coat in grated Parmesan cheese. (Herbs in the mixture would be nice! But don’t add salt. The cheese is plenty salty.)

5. Broil 7 minutes on each side.

6. Enjoy!

    excellent! I will never go back to the fried version and this was easier and crisper. the only thing i did different was to dip in breadcrumbs rather than parmesan, and then sprinkly with a little parmesan. If you like dipping yours in kethup the parmesan really wouldn't be necessary. - 9/14/11
