Cilantro Salsa

-3 medium tomatoes, finely diced-1 sweet onion, finely diced (Valencia onions are excellent for this)-1 clove garlic, minced-fresh cilantro, to taste (I use up to a cup of cilantro)-1 small jalapeno, finely diced (remove seeds and ribs for less fire)-the juice of one lime-salt and pepper, to taste
Makes four servings, to share or save for later:
Combine all ingredients in a food processor. Pulse until desired consistency is achieved. Otherwise, chop all vegetable ingredients finely and mix, adding lime juice, cilantro, and salt and pepper to taste. Put ingredients in a bowl. Chill in a covered bowl for at least one hour, to allow flavors to blend and intensify. Serve with your favorite tortilla chips or as a topping to your favorite Mexican foods.
