Introduction

Easy, fresh and really healthy! Easy, fresh and really healthy!
Number of Servings: 8

Ingredients

    -3 Fresh tomatoes
    -1 Small onion (I always use red onion)
    -3 Medium (fresh) jalapeƱos
    -Fresh squeezed lemon juice
    -5 Cloves of fresh garlic
    -Parsley (I use quite a bit)

Directions

1. Wash/scrub all veggies
2. Cut veggies into smaller chunks. Toss the tomatoes, jalapeƱos, and onion into food processor.
3. Roll the lemon on the counter top (loosens up the flesh of the lemon) and cut in half. Squeeze all the juice from one half into food processor.
4. Cut garlic and parsley into smaller chunks and throw in.
5. Slowly chop until everything is blended fairly well while still maintaining some chunkiness.

    Made this in a double batch for a July 3rd get together. I loved it, but next time I'll add another jalapeno or two. Maybe just the seeds from what the recipe calls for. - 7/5/08
