1 cup yams, cooked and mashed6 Splenda packets1 egg white1/2 teaspoon vanilla extractTopping:2 tsp. packed brown sugar2 Splenda packets1 tbp. chopped pecans1/2 tbp. all-purpose flour1/2 tbp. whole wheat flour1/2 tbp. unsweetened applesauceButter-flavored cooking spray
*Makes 3 servings*
1. Preheat the oven to 350°F. Lightly grease (or spray with cooking spray) a baking dish.
2. Combine the sweet potatoes, Splenda, egg white, and vanilla in a blender and process until smooth. Spoon into the baking dish.
3. Stir together the brown sugar, Splenda, pecans, flours, and applesauce in a medium bowl. Lightly sprinkle over the sweet potato mixture. Spray the top with butter-flavored spray and bake until lightly browned, about 30 minutes.

really good! I've been looking for a great, as healthy as possible sweet potatoe casserole recipe for a while, and this one was great! I also, had to double the recipe b/c I made this for easter. Also I had to double the double of the topping to fully cover the dish. It was a hit! - 4/11/09
