Chickpea Salad

Ingredients
2 cups chickpeas, rinsed and drained3 tbsp vegan mayo (Vegenaise)1/2 tsp ground mustard1/4 tsp dried dill1/4 tsp celery salt1/8 tsp garlic powder1/4 cup diced celery2 tbsp minced red onion or vidalia onion1/8 cup chopped walnuts 1/8 cup dried cranberries salt and pepper to taste
Directions
In medium bowl, coarsely mash chickpeas with a fork (You can also pulse in a food processor). Add remaining ingredients and mix well. Chill in fridge for at least one hour. Serve on bread, a wrap or over salad greens. Makes 4 1/3 to 1/2 cup servings.
