Cool Ranch Pasta Salad

1 Box Tricolor Rotini Pasta1 Summer Sausage1 can Large Black Olives1 block of Monterey Jack CheeseLight Ranch Dressing
This may be prepared the day before or day of. Allow enough time for ingredients to chill before serving.
Prepare the pasta according to box instructions--cooking time will be approximately 8-10 minutes. While the pasta is boiling, prepare other ingredients. Drain the can of olives. Cut the block of cheese into 1/2-3/4 inch cubes. To prepare the sausage, first slice it into 1/4 inch slices then quarter each slice (much like you would divide a pie or cake). Place olives, cheese, and sausage in a large mixing bowl.
Once the pasta is done cooking, drain it into a collander and rinse thoroughly with cold water. This removes the extra starches to prevent sticking and also stops the cooking process. Drain all extra liquid off the pasta.
If you are cooking ahead of time, you may mix the pasta with the other prepared ingredients and let sit in the fridge. Otherwise, mix the pasta into the large mixing bowl and toss ingredients. Then add the Ranch Dressing to just coat all of the ingredients (about 1/2 cup).
Serve this dish cold. I always bring extra ranch to the event for those who "need" the extra dressing.
