Citrus and Black Bean Salad

Ingredients
2 oranges, peeled and sectioned 1 16 oz. can of black beans, drained and rinsed 1/2 cup red onion, chopped 1/2 avocado, sliced 2 tablespoons lemon juice black pepper to taste
Directions
- 1 grapefruit, peeled and sectioned
Combine all ingredients. Serve at room temperature.

I changed a few of the ingredients also. Used a can of butter beans, red kidney beans, mandarin oranges and one whole navel orange and red onion. I added 6 large shrimp cut into quarters, along with a whole avocado. I mixed the lemon juice with a Tbs of honey and fresh ground pepper. Very good! - 4/16/09
