Easy Baked Rice Pudding

Ingredients
1 cup rice2 cups water3 eggs beaten2 cups milk1/2 cup sugar1 tsp. vanilla1/3 c. raisins (or 3 mini boxes)1 pinch ground nutmeg or cinnamon, or both1/2 tsp. salt
Directions
1. Cook rice
2. Preheat oven to 325 degrees F
3. In a large bowl, combine beaten eggs, milk, sugar, vanilla, and salt. Mix well.
4. Stir in rice and raisins.
5. Pour and spread into a 10x6 baking dish.
4. Bake uncovered for 30 minutes.
5. Stir pudding and sprinkle with cinnamon and nutmeg.
6. Bake for 30 minutes more.

Makes 12 servings.
