Zucchini Walnut Bread

3 medium eggs200 ml vegetable oil400 ml granulated sugar15 ml vanilla400 ml zucchini, grated600 ml all-purpose flour5 ml baking soda10 ml cinnamon5 ml salt200 ml walnuts, chopped

Beat eggs until light and fluffy. Add oil, sugar, and vanilla, and beat again. Stir in zucchini. Combine the dry ingredients and add along with the nuts. Pour into two 23 X 13 cm. (9 X 5 in.) greased and floured loaf pans. Bake at 165 degrees C (325 degrees F) for one hour or until firm and slightly browned. Makes 2 loaves, 12 slices each.
