Chopped tondli (tindora) 1 cup, chopped tomatillos or tomatos 1/2 to 1 cup, diced onion 1/2 cup, curry powder, chilli powder, salt, sugar, diced potato 1 large. For tadka olive oil 1 tbsp, asafoetida a pinch, turmeric powder 1 tsp, mustard seeds 1 tsp.
Make tadka first - heat oil, add mustard seeds. When seeds start sputtering, add hing (asafoetida) and turmeric. Add onions and saute, add chopped vegetables and saute. Cover with water and let medium boil for 15 min. Add curry powder, chilli powder, salt, ground peanuts and sugar. Mix well and cook for another 10-15 min. Garnish with cilantro.
