Ingredients
About 7 small red skinned potatoesExtra virgin olive oil1/2 teaspoon kosher salt1/4 teaspoon dried basil1/4 teaspoon dried oregano1/4 teaspoon dried thyme1/4 teaspoon garlic salt
Directions
Preheat oven to 450 degrees. Prepare potatoes by washing and cutting. Combine the potatoes, garlic, herbs, and salt in a mixing bowl. Add enough olive oil to coat all the potatoes. Toss to coat.
Spread the potatoes in a single layer on a baking sheet, and bake at 450 degrees until golden brown. Toss the potatoes about halfway through the baking time to ensure even browning. Baking time will vary, about 30-45 min, depending on the size of your potatoes.
