Lubia (Lebanese Stewed Greeen Beans)

1/4 cup olive oil2 medium onions, cut into thin slivers12 cups fresh green beans, ends trimmed28 oz. can of crushed or stewed tomatoes2 tsp. sugar1 Tbl. chicken base1 tsp. ground cinnamon1/2 tsp. ground allspice3 Tbl. chopped fresh parsleySalt & Pepper to taste*Plain yogurt and pita chips as optional toppings
In a large stock pot, saute the onion in the olive oil until translucent and tender.
Add the can of tomatoes, chicken base, sugar, cinnamon, and allspice to pot and stir to combine,
Add the green beans and toss until coated.
Cover pot and cook over low heat until beans have softened and sauce has thickened (approximately 2 hours).
Add a little water if sauce becomes too thick or threatens to burn.
Right before they're done, add parsley and salt and pepper to taste.
Serve warm or room temperature.
Makes 8 servings of approximately 3/4 cup each.
*Optional: Top each serving with a dollop of plain yogurt (Greek style if you have it) and crumbled pita chips.
*Alternative Cooking Method: This recipe can be cooked in crockpot or slow cooker on low for 6-8 hours. Just saute the onion in a pan first and then add all the ingredients, except the parsley to the slow cooker. Add parsley just before serving.
