3 eggs, lightly beaten1 cup salad oil2 cups zucchini, grated and drained (I pat between paper towels)2 teaspoons vanilla3 1/4 cups flour1 teaspoon baking powder1 teaspoon baking soda3 teaspoons cinnamon1 teaspoon salt3/4 cup raisins1 cup chopped walnuts
Mix first 6 ingredients. Sift together dry ingredients; combine with zucchini mixture. Add raisins and/or nuts. Makes 2 loaves. Bake at 350-degrees F for 1 hour; cool 10 minutes. Remove from pan. Individual loaves make welcome gifts. You may substitute 1/2 cup coarse bran for 1/2 cup of the flour.
