Roasted Chickpeas

Ingredients
1 can (15 oz) Chickpeas1/2 T Olive OilSpices of your choice (I like the Moroccan Spice Mix from KalynsKitchen.com)
Directions
Preheat oven to 350F. Drain chickpeas and rinse well with cold water until no foam appears. Let beans drain 5-10 minutes, then pat dry with cloth or paper towel.

While beans drain, make spice mix.

Toss beans with olive oil, spice mix, and salt. Arrange in single layer on baking sheet. Roast 50 minutes until they are slightly browned.

    Made this today - very good. I thought I would be smart & skip a few fat grams by skipping the oil - not smart. Spices didn't stick on like they should have. I used cumin, chili powder, paprika, & garlic for my seasoning. Will definitely make again. Great snack & great as salad topping! - 7/21/11
