Crunchy What's-in-the-fridge Salad

2 med sized red tomatoes, diced2 small zucchini (baby marrow), sliced4 med white button mushrooms, sliced30 green beans (approx), sliced into longish lenghts1 med green apple, diced2 cups (approx) cabbage, finely sliced1 tsp thyme1/2 cup fresh lemon juice
Toss eveything together and enjoy on it's own or with a protein portion.
The trick is to chop the ingredients into fairly large chunks to encourage chewing. I usually grab whatever fresh fruit and veg I have in the fridge and make it up as I go along.
