Apricot-Lime Stir Fry

Ingredients
Chicken breast, green pepper, zucchini, apricots, lime juice, lemon juice, salt & pepper to taste, ginger, garlic powder
Directions
Heat oil in wok. Cook chicken in oil until golden brown. Add peppers, zucchini, salt & pepper. Cover and cook 5 to 7 minutes until they start to be tender. Add lime juice and lemon juice and stir to coat. Add ginger & garlic and stir to coat. Add apricot slices. Cook an additional 5-7 minutes or until apricots have turned to sauce. Serve over rice, if desired.
