Vegan Potato Salad

2 lbs golden potatos1/2 of a red onion3 celery stalks1 can black olives1/2 cup vegenaise1 Tbsp yellow mustard1 Tbsp pickle relish1 Tbsp sugar1 Tbsp vinegarSalt and pepper to taste
Peel, chop into bite sized pieces, and cook potatoes. (about 15 min.)
Let potatoes cool.
Chop onion and celery.
Mix vegenaise, vinegar, sugar, mustard, pickle relish, and salt and pepper.
Add olives, onion, celery, and potatoes to dressing.
Refrigerate overnight for best results.
Enjoy!
