Bourbon Chicken

You’ll Need:1 ½ lbs. boneless chicken breasts, cut into bite sized pieces¼ cup cornstarch mixed with ¼ tsp. salt2 tblsp. canola oil2 minced garlic cloves1/3 cup orange juice concentrate½ cup water¼ cup soy sauce1 tblsp. apple cider vinegar¼ tsp. minced ginger½ tsp. crushed red pepper flakes¼ cup brown sugar, loosely packed1 tblsp. ketchup
Preparation:
Toss chicken chunks in salted cornstarch until lightly coated. Heat a large skillet over medium-high heat. Once hot, add oil and garlic and stir gently. Add chicken chunks and cook quickly until chicken browns. Remove chicken and set aside. In the same skillet, stir in the rest of the ingredients and bring to a boil. Stir until the brown sugar dissolves. Add chicken back in, reduce heat to low and simmer until chicken is cooked throughout and sauce thickens, about 15 minutes.
Serve over simple white or brown rice, garnished with scallions.

ok i have to say this is HANDS DOWN the BEST thing i have ever cooked in my life and very near the best thing i have ever eaten. i made it twice in one week i loved it so much (even my boyfriend loves it) i used pineapple juice instead of orange and WOW! this is OUTSTANDING! thanks so much - 4/25/11

This was pretty good! I ended up adding about a cap-full of bourbon to give it an extra kick. I think next time I'd cut back on the OJ (it was a bit too strong for the other flavors) and thicken the sauce a little bit. We like heat so I might add more crushed pepper. I will definitely make it again! - 10/11/10
