Cucumbers & Onions

Ingredients
1 Large Onion - sliced (approx. 2 cups)1 Large Cucumber - sliced (approx. 4 cups)4 Tsp. sugar2 Tsp salt1 1/3 C Vinegar 4 C water
Directions
Slice Cucumber and onions. Alternating layers in a bowl. Mix water, vinegar, salt and sugar in a bowl. Stir until sugar and salt are dissolved. Pour liquid over layered onions and cucumbers. Marinate 4-6 hours but best if made 24 hours ahead. Longer it sits the better it is.

Pepper to taste can also be used. I generally use 1/2 tsp. of good quality ground pepper.
(Thicker slices will require longer marinating time.)

"Pickling" liquid can be cut in half for smaller recipes. Just ensure that the cukes and onions are fully covered.
