Simple Frittata

Ingredients
2 tblsp olive oil1 med potato, sliced thinly1 medium onion, sliced thinly1.5 tsp rosemary, basil, tarragon, or oregano (fresh)1 garlic clove, crushed4 eggs, beaten1/2 cup grated cheese (optional)salt & pepper to taste
Directions
Makes 4 servings

Heat oil in skillet, saute potatoes & onions covered about 8 minutes or until tender. Stir in garlic & herb of choice. Pour beaten eggs over, and tilt to distribute evenly. Sprinkle on cheese & salt & pepper. Cover & cook on low heat 10 minutes, until eggs on the bottom are golden and set. Transfer to broiler and cook until cheese is melted on top.
