Ingredients
2 cans garbanzo beans, drained and rinsed (about 3.5 cups01 tsp sea salt1/4 cup olive oil1/4 to 1/2 cup lemon juice (fresh is best, start slow, you can always add more to taste)up to 10 cloves garlic (can't ever add too much!, adjust to taste)Optional additions:1 tsp coarse ground black pepper (or to taste)
Directions
Drain, rinse garbanzo beans, pat dry with paper towels before processing. Place in bowl of food processor, then add remaining ingredients, starting with the smaller amounts. Process until it is smooth and thick. If too thick, add a bit more lemon juice and/or oil. Adjust flavors to taste (more salt, garlic, lemon?) Serve immediately (room temperature brings out the flavors) or refrigerate up to 10 days (if it will last that long). Will serve up to 15 people or more as an appetizer.
