Lemony Garlic Quinoa

Ingredients
1 cup of quinoa2 cups of water2 T. olive oil4 T. fresh squeezed lemon juice3 cloves of garlic, minced1 t. salt1/2 t. pepper1/2 cup chopped fresh parsley
Directions
Prepare quinoa according to package directions.

Allow quinoa to cool completely.

In a bowl combine the olive oil, lemon juice, garlic, and salt and pepper. Mix in Quinoa and Parsley. Serve cold.
