Italian Shrimp over Rice

Ingredients
1 lb thawed medium shrimp, peeled, devained and uncooked1 tbsp olive oil1 can hunts FIRE ROASTED TOMATO - it doesnt show in search1 clove garlic minced1/4 c balsalmic vinegar2 tbsp brown sugar1/2 package frozen spinach thawed1 onion diced2 cups cooked brown rice
Directions
Add olive oil to pan to heat up, add garlic, onions to saute until tender. Add tomatoes, vinegar, spinach and sugar and stir and cook together 10 minutes. Add shrimp and cook 5-7 minutes until throughly cooked.

Good herbs to add: italian seasoning, parsley
Changing shrimp for chicken is good too

Pour 1/2 c of tomato mixture over 1/2 c rice
