Ground Turkey Stuffed Portabella Caps

Ingredients
6 ounces extra lean ground turkey sauteed with a little Pam spray2 Portabella Caps remove the gills and wash well1 whole (2 cups) zucchini finely chopped in a food processor1/2-1 Red Pepper diced or chopped1/4 Cup Mozzarella (low-fat) to melt on top
Directions
Sautee your ground turkey in a few sprays of Pam to help with sticking, add salt, pepper, onion powder, fresh crushed garlic (all to taste) chop red pepper, zucchini, in a food processor and sauté with the ground turkey. (Feel free to add any other veggies you feel will add to this dish as well) Stuff mixture into 2 large portabella caps with the gills removed, sprinkle with low fat mozzarella. Bake at 350 degrees for 20 minutes, then put under the broiler for 5 minutes to crisp and brown the tops.
