Ingredients
1 2/3 cup whole wheat flour1 cup sugar1 tsp baking soda2 eggs1 tsp valilla1/3 cup light olive oil1/3 cup apple sauce1 tsp baking powder1 tsp cinnamon1/2 tsp salt1 cup grated carrots1/2 cup crushed pineapple & juice
Directions
This recipe makes 12 large muffins

Sift dry indredients into bowl. Beat together eggs, vanilla and oil and applesauce. Add to flour mixture. Add carrots, pineapple and juice. Mix well and fill cups & bake at 400 for 20 mins.
