Southwest Black Bean and Veggie Salad

Ingredients
* Carrots, raw, 1 cup, chopped * Sweet Corn, Fresh, 1 cup * black beans, 2 cup * Celery, raw, 1 cup, diced * Green Peppers (bell peppers), 0.5 cup, chopped * Yellow Peppers (bell peppers), .5 pepper, large (3-3/4" long, 3" dia) * Scallions, raw, 1 cup, chopped * Tomatoes, red, ripe, raw, year round average, 1 cup, chopped or sliced * Tortilla Strips Lightly Salted /Fresh Gourmet Salad Topper, 6 tbsp * Romaine Lettuce (salad), 10 cup, shredded * *Tillamook Pepper Jack Cheese, 3 oz
Directions
Chop veggies, add cheese, beans and tortilla toppers. Toss with your favorite dressing. ( Don't forget to add your calories) Enjoy.
