Zucchini lasagna (low fat)

Ingredients
Zucchini, 3 cups, sliced thinRicotta, fat-free, 2 cupsMozzarella cheese, part-skim, 1 cupMarinara sauce, 2.5 cupsQuinoa, 2 servings
Directions
1. Boil water and prepare quinoa according to box directions. Preheat oven to 425 degrees F.
2. Slice zucchini thin and layer bottom of glass baking dish with half of the zucchini.
3. Layer ricotta cheese, quinoa, and 1.5 cups of marinara sauce on top of zucchini.
4. Layer rest of zucchini on top of marinara. Sprinkle mozzarella cheese and pour remainder of marinara sauce on top of dish.
5. Cover with foil and bake at 425 degrees F for 30 minutes. Uncover and bake an additional 10-15 minutes to melt mozzarella and soften zucchini if necessary.
