Chicken Salad on Hoagie Roll

3 oz. chicken tendersButter flavored sprayMcCormick Greek Seasoning (No MSG!) to taste1 small apple (I used Gala), chopped1 -3 inch piece of celery, diced1- 5 inch scallion, diced2 T. whipped cream cheese1 small hoagie roll (less than 150 calories)
Sprinkle tenders with McCormick Greek Seasoning
Heat skillet with butter flavored spray, over medium high heat. Brown tenders, cook until done. Let rest under foil tent while you prepare the rest of the ingredients.
Dice apple, celery, and scallion. Place in bowl and combine with more Greek seasoning to taste, and two tablespoons whipped cream cheese..
Dice chicken, while still warm; combine with other ingredients.
Meanwhile, wipe out skillet with a paper towel. Lightly spray it with more butter flavored spray. While it is heating, remove some of the center of the roll to allow for the generous amount of chicken salad that you will add. Lightly toast the roll.
Add the chicken salad to the roll and enjoy!
Notes: You can substitute salt and pepper or other seasonings to taste.
Removing the center of the halved roll will elimate a few calories. Save the pieces for another use.
