Pecan Encrusted Catfish Fillets

3 large eggs1/2 cup flour3/4 tsp. salt1/4 tsp. black pepper1/4 tsp. cayenne pepper1/4 pecan pieces1 cup Pankp Bread Crumbs
1. Beat eggs in a medium bowl until frothy.
2. Mix flour, salt, black and cayenne pepper in another medium bowl.
2. Combine panko bread crumbs and pecan pieces in another bowl.
3. Dredge catfish fillets in flour mixture, shaking off excess.
4. Dip fish in egg and then coat both sides with the panko mixture, pressing panko into the fillets.
5. Divide olive oil. Place half the oil in the bottom of a sheet pan. Lay the fillets in the pan and drizzle the top of the fillets with the remaining oil.
6. Place in a 400 degree preheated oven. Bake for 10 minutes, gently turning the fillets after about 5 minutes until lightly brown.
