Delicious Individual Peach Cobbler

* Nectarines, 6 fruit (2-1/2" dia) * *Soya milk, Tesco sweetened, 100 gram(s) * Egg, fresh, 2 small * Plain white flour, 60 g or 1/2 cup * Salt, 0.5 tsp * Baking Powder, 0.5 tsp * Granulated Sugar, 1 tsp *Ground Cinnamon, 1 tsp *Lemon Juice, 25 mL
Makes 3 servings.
1. Slice nectarines & divide them into 3 individual dessert cups (2 nectarines per cup) that are oven-safe.
2. Mix eggs in a small bowl.
3. Sift flour into a bowl & mix with eggs, soya milk, salt, baking powder, sugar & lemon juice until well mixed.
4. Pour mixture over top of each cup of nectarines. Then top with ground cinnamon.
5. Bake in an oven at 400F or gas mark 6 for 20 minutes or until top is golden brown.
6. Remove from oven & serve with hot custard. Or cool them down & add ice cream + wafer.
Variation: add raisins with the nectarines.
