1 tbs. canola oil1 onion, chopped2 carrots, cut into strips, about 1 cup3 boneless, skinless chicken breast halves, cut into 1-inch chunks2 tbs. butter2 tbs. curry powder1 minced garlic clove1 14oz can of lite coconut milk
Cook onion & chicken in oil in a large frying pan or skillet over high heat until chicken is browned. Put chicken & onion in a bowl, set aside. Wipe pan clean with a paper towel. Turn heat to low. Melt butter in the pan, add garlic, cook for 3 minutes (or becomes fragrant). Add curry powder, continue to cook for a minute or 2. Stir in coconut milk. Return chicken & onion to pan, cover, simmer for 10-12 minutes. Add carrots in the last 5 minutes of cooking.
Serve over rice, you can garnish with peanuts if desired.
