Low Fat Oat Cakes

Ingredients
2 C whole wheat flour1/2 tsp salt1 tsp baking soda1 tsp cinnamon1/2 tsp nutmeg1 C frozen blueberries4 C oats1 C apple sauce (or oil, or a combination of the two)1/2 C brown sugar1 tsp vanilla3 eggs1 C dried cranberries, reconstituted1.5 C raisins, reconstitutedwarm water if necessary
Directions
Pre-heat oven to 350 degrees.
Grease and flour glass 13X9 inch baking dish.

Reconstitute raisins and dried cranberries in hot water. Pour water off before adding dried fruit to batter (water can be reserved for later in case batter is too dry).

Combine flour, salt, baking soda, cinnamon, and nutmeg.

In a separate bowl, combine apple sauce* and vanilla extract, beat in eggs, stir in oats, stir in flour (with spices and baking soda).
*(Note that apple sauce is a healthy substitution for oil. It has a lot less fat and calories than oil and works well in this recipe. You can still, of course, use oil instead of apple sauce or a combination of the two).

Fold in cranberries and raisins.

Fold in frozen blueberries.

Add warm water if batter is still dry.

Spread batter evenly into greased and floured baking dish.

Sprinkle raw oats on top.

Bake for 30 minutes at 350 degrees.

Cut into 24 pieces. Oatcakes can be wrapped and stored in freezer for several weeks.

    Got mine in the oven cooking now...added coconut sugar instead of brown sugar and eggless mix instead of eggs...and lowered the calories to 104 each! - 4/20/18

    I pay $6 for 4 of these in my health food store. Good but a bit bland. Maybe a lot more spices needed (I didn't have nutmeg so added double cinnamon and vanilla.) Also, these need to be made into a batter with lots of warm water. I spaced and made them w/out and it just didn't work. Thanks for this! - 10/3/11
