Oatmeal Flax Pancakes

Ingredients
2 cups oats2 cups 1% buttermilk2 eggs, lightly beaten1/4 cup butter, melted1/4 cup flour (white or whole wheat)1/4 cup ground flax2 tbsp sugar1 tsp baking powder1 tsp baking soda1/4 tsp cinnamon1/4 tsp salt
Directions
Combine oats and buttermilk, stir well. Cover and refrigerate overnight. Add everything else to the batter in the morning and stir by hand to mix well. Spoon batter, about 1/3 of a cup for each pancake, onto a lightly greased griddle or frying pan over medium heat. Cook for about 3 minutes or until tops bubble, then flip for another two minutes. Makes at least 16 pancakes, depending on how big you make them. Serving size was two pancakes.
