Ginger Cake

2.5 cups all-purpose flour1.5 cups sugar1 T. baking powder.5 tsp. salt.25 tsp. ground cloves.25 tsp. ground allspice3 eggs1.5 tsp. vanilla extract.5 cup unsweetened applesauce4 T. canola oil1 cup milk2.75 oz (just over 1/2 cup) crystallized ginger, chopped fine
Preheat oven to 350 degrees.
Combine flour, sugar, baking powder, salt, cloves, and allspice. Stir to combine.
In another bowl, beat eggs and vanilla. Stir in applesauce. Stir in canola oil and beat until smooth. Slowly add milk.
Add wet ingredients to dry ingredients and stir just until combined. Add crystallized ginger and quickly stir in.
Pour into 9"x13" pan that has been coated with nonstick cooking spray. Cook for approximately thirty minutes, until a toothpick comes out clean or with small crumbs adhering.
