Seitan Bratwurst

* 1 1/4 c. vital wheat gluten (I used Bob's Red Mill) * 1/4 c. nutritional yeast flakes * 1 1/2 tbsp Penzeys bratwurst seasoning * 1 c. cold vegetable broth (it's important that it is cold) * 1/2 c. silken tofu * 1 tbsp. olive oil * 1 tbsp. reduced sodium soy sauce
Prepare a steamer and bring water to a boil.
Combine the dry ingredients in a large bowl. Mash up the tofu, add the soy sauce and oil, then whisk in the vegetable broth. Add the wet ingredients to the dry and combine well.
Divide the dough into six equal pieces and place each on a piece of aluminum foil. Shape into logs and roll up in foil, twisting ends to secure. Don't worry about getting them exactly right - they will puff up and shape themselves as they steam.
Steam sausages for 40 minutes. Store in refrigerator for up to one week, or freeze for later. Reheat in a skillet, in the microwave, or grill them.
