Breakfast Tortilla Casserole

6 large eggs3 T skim milk1/2 onion, chopped1 clove garlic, chopped4 10-inch flour tortillas, cut into large squares or torn2 links of Turkey Italian Sausage, crumbled and browned1 large potato, cubed1 cup shredded cheddar cheese
1) Preheat oven to 325 degrees.
2) In a large bowl, beat eggs with milk, onion, garlic and a dash of salt & pepper -- set aside.
3) Take casing off sausage links and brown in a frying pan, making small crumbles as you fry.
4) Cut or tear tortillas into 2" squares/pieces and add to egg mixture, making sure each piece is coated.
5) Grease a baking pan (8x8 or 9x13 works fine) and spread tortillas across the bottom. Layer on potatoes, sausage and rest of egg mixture. Top with cheddar cheese.
6) Bake uncovered for 20-25 minutes or until egg is cooked to your liking and cheese is golden brown.
