Hola Granola Bars

4 1/2 cup old fashioned rolled oats (not quick or instant)1 cup whole wheat flour1/4 cup brown sugar1 tsp. baking soda1 tsp. cinnamon1/4 tsp. salt2/3 cup canola oil2 tsp. vanilla extract2/3 cup honey1/2 cup raisins or other dried fruit1/2 cup craisins or other dried fruit1/2 cup sunflower seeds
Preheat oven to 325 degrees Fahrenheit. Line a 9 x 13 pan with foil, allowing an extra few inches on each end of the pan. Oil or spray generously. Stir in oil, vanilla & honey. Mix gently. Add dried fruit and seeds. Mix. Put in pan and press evenly to edges. Bake for 20-30 minutes or until golden brown. Let cool at least 10 minutes. Grab extra ends of foil and transfer to cutting board. Cut into 24 bars and cool before removing from foil. Store in airtight container or wrap in snack sized bags. Makes 24 bars.
Optional - add chocolate chips at end of the cook time or add coconut or other nuts to replace the sunflower seeds.
