Chicken Stir Fry

1 cup long grain white rice1 chicken breast, boneless and skinless1 package frozen broccoli florets (or fresh)1 cup raw onions, sliced on diagonal1 cup celery, sliced on diagonal1 tbsp olive oilfew drops of sesame oilginger root, finely minced or sliveredvinegar to tastesoy sauce to tasteoptional - hot pepper flakes
Cook white rice according to package instructions.
Slice chicken breat into thin bite sized slivers.
Heat olive oil in large skillet. Quickly saute chicken in hot oil til completely cooked. Add broccoli and cover to cook through, Add onions, ginger root and celery and cook. Vegetables should still be crunchy. Season with sesame oil after cooking is completed. Add vinegar, soy sauce and pepper to taste. Serve over rice.
