Black Bean Mini Chocolate Cupcakes

Ingredients
1 can black beans, drained and rinsed1/2 C flax meal1/4 C almond butter (could also try peanut butter)2/3 C coconut sugar1/2 C cocoa powder10 dates2 eggs, beaten1 t vanilla (or more)1 T instant coffee (optional)
Directions
Put the 10 dates in a food processor and chop them thoroughly. Then add the rest of the ingredients and turn the food processor on until well blended. Batter will be very thick.

Spoon into 24 mini-muffin tins (sprayed with non-stick cooking spray).

Bake at 350 for about 20-25 minutes.
