Sante Fe Black Beans & Rice Salad

Ingredients
1/2 c dijon mustard2 TBS vinegar2 TBS olive oil1 TBS pasley or cilantro1-1/2 TSP your favorite hot sauce1/2 tsp chili powder1/4 tsp cumin3 C cooked long grain and wild rice1 15 oz can black beans1 C chopped fresh tomato1 C corn (I used leftovers from corn on the cob)1/3 C chopped red or green onion1 small can green chilis or 1/4 C fresh
Directions
Make dressing with mustard, oil, vingegar, hot sauce and spices - mix with the rest of the ingredients, chill 1 hour.

*cooking time depends on what type of rice you use; I purchased organic rice, therefore 50 minutes, I don't know about Uncle Bens or Rice-A-Roni
