Mushroom-Sesame-Tofu Soup

1.5 c chopped onions1 tsp fresh grated ginger1 tbsp & 1 tsp olive oil225g sliced fresh mushrooms (8 oz).5 tsp cayenne pepper.5 tsp salt2-3 bay leaves4 c undrained whole tomatoes, chopped2 tbsp tahini3 tbsp peanut butter1 c. veggie stock (I use a whole Edward and Sons low-sodium bouillon cube to make 1 cup)1 package Mori Nu Extra Extra firm tofu, drained and pressed, cut into 3/4" cubes
In a soup pot:
1. Saute onions, ginger in oil = 4-8 min
2. Add mushrooms, cover, and cook on low = 10 min
3. Add cayenne, salt, bay leaves, tomatoes with juice & veggie stock, simmer = 20 min
4. Add tahini, peanut butter, stir well to dissolve, then add tofu, simmer low heat, stirring occassionally = 20 min
