Masa Pancakes

Ingredients
1 cup Masa (corn flour)1 tsp baking soda1 tsp baking powder1/2 tsp salt1 large egg1 cup fat-free milk1/4 - 1/2 cup water
Directions
Mix all dry ingredients in a small mixing bowl. Add egg and milk and stir to mix. Add water as needed to make the batter thin, but not too thin, like pancake batter.

Ladle batter onto a preheated skillet or griddle coated lightly with non-stick spray. Use enough to make 3 1/2" to 4" pancakes.

Cook until the bubble holes do not close. Flip and cook a couple minutes more, till both sides are nicely browned.

    I tried this recepie and it did not come out good. I made some with thicked and thinner batter but either way the midle would not cook up. Even waiting for the bubbles to pop befor turning over did not help. They tasted OK with a little surup. - 3/11/10
