Breakfast Omelet-pancake

Ingredients

1/3 cup Walmart pancake mix1/4 Egg whites1/2 cup sliced mushrooms1/2 tomato (large)
Wash then chop the mushrooms very finely. Fry them in a non-stick pan while you chop the 1/2 tomato into small blocks. When done, remove the mushrooms from the heat and mix with the tomato.
Prepare the pancake mix with the egg whites before adding a little bit of water to make the mixture slightly runny. Once smooth, combine with the mushroom/tomato mixture. Bake as you would a pancake. Serves very well with cream cheese or cottage cheese (not included nutritional info).
