Ingredients
1 lb. Lean ground beef, half a box of elbow macaroni(6-8 oz - 6 is used for nutritional info.), a medium diced onion, 3 cloves of garlic, one can diced tomatoes (no salt added), pepper and parmesan cheese to taste. If you want you can add, basil, oregano and parsley but I find it fine without it. You can also substitute whole wheat pasta and turkey meat, but i find the beef works much better for this.
Directions
In one pot, boil macaroni. In a separate pan, add chopped onions and let them cook slightly (4 minutes or so). Add ground beef and garlic and brown meat. After it browns, add can of tomatoes and some pepper (and salt if you want some, but I don't add any because the parmesan cheese at the end has plenty), mix around and let simmer for about 20-25 minutes, until onions are tender. If the tomatoes are too "acidic" or "tart" for you, add 1 tbl. of sugar(not included in nutritional info). When macaroni noodles are done, drain and put back into pot. When meat/tomato mixture is done, just add that to the pot the macaroni is in and mix it all together. Put in a bowl and top with some parmesan cheese. Makes 4 hearty, or 6 smaller servings.
