Lynn's Low Cal Chicken & Rice Soup

Ingredients
Chicken Breast, no skin, 0.5 breastCarrots, raw, 1 large (7-1/4" to 8-1/2" long) Celery, raw, 1 cup, diced Onions, raw, 1 cup, chopped Chicken Broth, 1 cup (8 fl oz) brown rice (1 cup cooked)
Directions
Saute onion and celery in olive oil until clear. Cut chicken into small pieces. Stir chicken into onion and celery until chicken is well cooked. Add remaining ingredients except rice. Add rice about 5-10 minutes before serving (just long enough to reheat and hydrate).
