Sealess Seafood Stew

Ingredients
* Stewed Tomatoes, 28 oz can * Tomato Sauce, 26.5 oz can * Potato, raw, 5 medium * Shrimp, cooked, 10 oz * Scallops, raw, 16 oz * Basil, fresh, 6 leaves * Dill weed, fresh, 8 sprigs * Bay Leaf, 2 whole * McCormick Old Bay Seasoning, 1.5 tsp * Paprika, 2 tbsp * Pepper, black, 2 tbsp * Salt, 2 tsp * Water, 3 c
Directions
Cut the potatoes into medium sized chunks, about 3/4 to 1 inch each. Place them in a stockpot with the stewed tomatoes, sauce, and water, and begin to boil.

While boiling, chop the basil and dill into fine slices. Add them to the pot with the rest of the spices and stir. When the mixture begins to boil, cover it and reduce heat to low for 45 minutes.

If the potatoes are tender or well on their way to being so, add the shrimp and scallops and cover again, allowing it all to cook for an additional 15 minutes.

Makes 6 2-cup servings. (Maybe! I don't know, I haven't eaten it yet!)

    You can cut sodium a few ways. 1st, ditch the added salt, Old Bay has plenty. 2nd Use low sodium tomato products or make your own tomato base. I take fresh tomatoes and grill them. Collect the juice when peeling! That could replace the stewed tomatoes. This is similar to what I make. - 8/8/10

    this sounds yummy. i might try to make this tomorrow. it seems that all the recipes in here, the sodium goes through the roof. i plugged in a breakfast smoothie recipe yesterday and was left with my mouth open at how much sodium my "healthy" smoothie had. still...i want to try your sealess stew. :) - 8/5/10
