1 28 OZ CAN HUNTS DICED TOMAOES WITH GARLIC BASIL ONIONS1 CUP DICED GREEN PEPPERS3 CLOVES MINCED GARLIC1 CUP DICED RED PEPPERS1 CUP DICED ONIONS2 TEA OLIVE OIL1 TEA ITALIAN SEASONING1 TEA SEASONING SALT2 TBLE RED WINE 4 CUP DICED EGGPLANT2 CUP SHREDDED MOZZARELLA CHEESE1/2 SHREDD PARMESAN CHEESE
Directions
IN NON STICK SAUTE PAN
ADD OLIVE OIL AND GARLIC SAUTE 1 MINUTE
ADD PEPPERS AND ONIONS AND SAUTE 5 MINUTES
ADD SPICES AND RED WINE
ADD DICED TOMATOES AND SIMMER 10 MINUTES
MIX WITH DICED EGGPLANT AND PLACE IN GLASS CASSEROLE BAKING DISH
BAKE IN 375 OVEN AND BAKE 30 MINUTES
TOP WITH CHEESED AND BAKE 15 MINUTES

    i,m looking for good,healthy recipes for eggplants. I just decided to plant some of the whte and purple striped ones in my new garden.
