Liz's Famous Quinoa Salad

Ingredients
1 Bell pepper1 cup dry quinoa3 medium stalks celery (leave them out if you're watching sodium)1/2 cup black beans1/2 cup sweet corn2 tbsp raw cilantro1 tbsp olive oil1 tbsp balsamic vinegar (or white vinegar)2 tsp sugar
Directions
Cook Quinoa and beans separately and allow to cool.

Dissolve the sugar in the oil and vinegar to make a dressing.

Chop celery, bell peppers and cilantro.

Combine all the above ingredients in a salad bowl and chill before serving.
