Low-sodium Blueberry Pancakes

Ingredients
2/3 cup flour4 teaspoons sugar1 1/3 teaspoons sodium-free baking powder2 Tablespoons of egg beaters2/3 cup skim or 1% milk2 teaspoons vegetable oil2/3 cup fresh blueberries
Directions
Mix dry ingredients. Add wet ingredients and blueberries all at once. Mix gently just until blended. Spoon onto hot griddle sprayed with olive oil. Turn once when nicely browned, spraying griddle again when turning. Sprinkled with powdered sugar, these pancakes are light and delicious!
